I love beets. Weird, I know.
Sometimes I laugh just thinking about how awesome it would be to have a beet farm
just like Dwight Shrute from The Office. Ha!
Anyways, I experimented with a few different recipes and I came up with this:
Roasted Beets with raspberry, orange dressing. Topped with feta
(because cheese makes almost anything even better right?)
I never measure while I am creating recipes,
so there's a slight problem sharing the recipe with others.......... exact measurements.
So, I finally have these measured, just taste test the dressing and adjust it
according to your taste buds before serving :)
A couple bunches bunches of beets (Usually around 8)
1/2 case raspberries (lightly smashed)
2 Tablespoons Raspberry vinegar
3 Tablespoons Olive Oil
2 teaspoons fresh rosemary (minced)
2 teaspoons salt
1 teaspoon pepper
Remove roots and tops of beets, wash and wrap in tin foil (like a baked potato)
Roast beets at 400 degrees for about 40 min. Or until soft enough to poke through
In mixing bowl, mix oil, vinegar, squeezed orange, lightly smashed raspberries, salt & pepper.
Beets will be very hot- remove from foil and dice into cubes. (I don't peel mine, you can easily peel them at this point, but I actually like the skin)
Toss cubed beets with the dressing top with feta cheese and serve warm.
