Friday Favorite: Pear Pizza


By the time Friday rolls around each week, we are all so ready to relax. 
I get so tired of the weekly cooking cleaning, cooking cleaning, cooking cleaning routine.
So, we decided to do pizza nights. 
With our curious and energetic little miss, restaurants are not so much of an option anymore. 
Making sure every single item is far out of reach from those chubby little hands, 
sippy cups flying across the table, drinks spilled, cheerios everywhere, 
and little miss climbing out of the high chair, makes for the opposite of relaxing dining experience!! So, this is our new Friday night tradition and I think we are all very happy about it. 
I hope it is one we will keep forever. 

This is our favorite pizza recipe lately. 
Mozarella, pear, ricotta, balsamic, honey, arugula, red onion, pine nuts 

Recipe:

One pizza crust- You can buy the dough and roll it out also. ( I am just lazy and buy the crust already made.) Costco sells a 4 pack, thin crust for only $4.00. It is our go-to.

Spread Olive oil on crust to create a very light coating.

The only somewhat tricky part is the ricotta- and truly the easiest way to do it is to grab small amounts with your hands and throw them down onto the pizza crust. About the size of a nickel- just plop them right onto the crust.

Then place all other toppings, sliced fresh mozzarella,  sliced pear, red onions, arugula,
pine nuts (we were out, so I substituted with almonds) and then drizzle with balsamic vinegar and honey. Sprinkle oregano flakes.

Bake at 425 for about 7 minutes, or until crust is golden brown.
