Feastings of Fall

One of many favorite fall recipes.

Pumpkin.spice.oatmeal.cookies

1/2 cup (1 stick) butter, softened
1, 15 oz package Krusteaz Pumpkin Spice Quick
Bread Mix
1 egg
1 & 1/2 cup quick-cooking oats
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons water
1/2 cup raisins (optional)

Preheat oven to 375°F. Place quick bread mix and butter in medium bowl. Mix on medium speed for 1 minute. Add egg, oats, sugar, cinnamon, nutmeg and water. Continue to mix on medium speed until dough forms. Stir in raisins, if desired. Using rounded tablespoon dough for each cookie, form into balls and roll in sugar, if desired. Place 2-inches apart onto ungreased baking sheet. Bake 11 minutes.
Makes 2 dozen cookies.

*** I use chocolate chips instead of raisins(My Dad and I believe raisins ruin any cookie ha ha).


I realized I was a little too anxious for this fall treat,when I went to four grocery stores and couldn't find the pumpkin spice bread mix. I was about to give up at store number five, when a very nice employee at A-fresh market must have seen my dissapointed face. As I stood on the baking isle with a bit of a frown, he approached me and said " What are you looking for that you can't find miss"? Of course I gave him waaaaaaay too much information and told him I had been to every grocery store around, looking for the pumpkin spice bread mix, and how I wanted to make my favorite fall cookies. He replied "you are a little early for that, but I think we may have recieved a shipment last night, let me go check". What a stud! He totally knew they had been delivered and found them in the back for me! Not only did the warm cookies make me smile, but his small act of kindness too!!

Hopefully the shelves will be stocked for ya'll soon.
